Delicious Gazpacho Soup Recipe
You just need to follow the below steps:
First, boil some water, and drop in tomatoes that you’ve cut an “X” into the bottom of. Remove them after 15 seconds and put them in an ice bath for about 1 minute. Dry, peel, remove seeds and core from the tomatoes. Be sure to place the seeds and pulp in a fine strainer over a bowl to catch the juices, and squeeze out every bit of it you can. Then, add tomato juice to obtain a total of 1 cup of the juice.
Move to a mixing bowl and add the rest of the ingredients (aside from the basil).
Mix. Puree 1 1/2 cups of the mixture on high for 20 seconds and return it to the bowl. Stir this together. Cover and place in the refrigerator for at least 2 hours, or overnight. Serve with the basil for a glorious gazpacho.
1 1/2 pounds vine-ripened tomatoes, peeled, seeded and chopped Tomato juice.
1 cup cucumber, peeled, seeded and chopped.
1/2 cup chopped red bell pepper.
1/2 cup chopped red onion.
1 small jalapeno, seeded and minced.
1 medium garlic clove, minced.
1/4 cup extra-virgin olive oil.
1 lime, juiced.
2 teaspoons balsamic vinegar.
2 teaspoons Worcestershire sauce.
1/2 teaspoon toasted, ground cumin.
1 teaspoon kosher salt.
1/4 teaspoon freshly ground black pepper.
2 tablespoons fresh basil leaves, chiffonade.
